We’ve got some Hard Lemonade for sale! And look at that color! That beautiful, natural color comes from the use of an insane amount of lavender pods that we use to brew a ginormous, fresh batch of lavender tea, that then gets blended with our lemonade-style seltzer. It drinks pretty balanced, with the acidity and sweetness hitting at just the right level, and then a soft tannic hit of dryness from the lavender. Enjoy straight out of the can, or pour over ice. Also legit with a dram of Old Tom Gin.
Inspired by the Paloma cocktail, Pierre has been hard at work these last few months trying to create the most perfect version of this yummo refresher using only the purest ingredients. Pink grapefruit juice, lots of grapefruit zest, and cane sugar come together with just the right amount of booze, acidity, and richness for that perfect sip of vacation vibes. You can enjoy this one at our spot, or take home cans to enjoy at yours. Served with a 'lil ice and a fresh grapefruit wheel.

Our Lager Lounge out of O’side is at it again with another absolute banger! Jeff takes the classic route for this one using Floor Malted Bohemian Pilsner malt along with copious amounts of Czech Saaz hops during the brew to make it taste and look the part. We felt like 12° was too much body, and 10° wasn’t enough, so we went right down the middle for a beer that drinks just the way we like it. It highlights our favorite hop for this…Saaz! Saaz! Saaz!
We all know a fresh German Pils is hard to come by. Luckily for all of us, Jeff brewed up an insanely legit batch out of our spot in O’side and we’ve now got it in 12oz cans! Made to be as traditional as possible using all German ingredients, the texture on this one is wonderfully firm in bitterness and greets your palate with mouth coating dryness that lingers in the long finish. It’s not too much of this, or not enough of that, but just right in its endless drinkability. Cheers to warmer weather and birds chirp’n!!!
Our Lead Brewer for our Costa Mesa spot dreamed up this beautiful little West Coast Pils, and he describes it best. Pete says "Smells like money on payday, freshly cut grass, ripe cantaloupe, grapefruit flesh, cotton bubble gum and a pleasant waft of diesel. On the palate is a light to medium body with flavors of rustic bread coming from the addition of spelt."
Yep, we hear you loud and clear! You've been asking for more dry and crispy lagers, and we've got one more for you. Our West Coast Pilsner brings you the big hoppy flavor and aroma that you like in IPA, but the drinkability and lower abv of what you're diggin' in a stronger Pils. This one gets hit with a heavy dry hop of Citra and Mosaic, and a sprinkle of Strata.
Papa, our Lead Brewer from our spot in Costa Mesa, took his Temporarily Permanent recipe, switched out the house ale yeast for our house lager yeast, and kept the rest the same. Sitting on a simple bed of Pilsner and Rye Malt, the hops are wonderfully expressive with all the New Zealand love we could ask for. Tasting notes? Think fresh kiwi, cotton candy, cactus cooler, and a dab of the Devil’s Lettuce.
This one only comes once a year….When your pals from @indiehops call you up and tell you that they’re gonna pick some fresh Strata from one of your absolute favorite hop farms ( @colemanagriculture in Oregon) at 4am in the morning, and then throw them on a plane at 8am, and then that you can pick them up at John Wayne Airport at 11am, you do it! We did, and then had them fresh cones in wort by 130pm that same day. We took some advice from the Fresh Hop King himself, Steve Luke of @cloudburstbrew , and used a whopping 15 POUNDS PER BBL on the hot side. The smell of the brewery was insane! We made this one as a SMASH beer using only Gambrinus Pils and Strata to allow the hop expression pop through like crazy. After fermentation, we sprinkled in 3 lbs per bbl of Strata & Strata CGX from the same farm, for a total of 18 lb per bbl of hops (which is the most we’ve ever used in any beer, ever). This beer hits with an intense lychee candy and peach tea profile, while whiffs of pineapple, orange marmalade and raspberry sneak through, and fill out the complexity further.
This one was awarded a Silver Medal in the West Coast IPA category at the recent World Beer Cup 2024 beer competition! Its got a lean body, a snappy bitterness, a dab of hoppy resin in the linger, and all the hoppy aromatics we need!! Well…that, and a good pally to enjoy it with! Flavor profile? Think Ruby Red grapefruit, navel oranges, and the Devil’s Lettuce in the linger.
The days of Mapquest may be long gone, but luckily for us West Coast IPA is here to stay! Our newest iteration uses a mix of Golden Promise and Pilsner malts to create a touch of breadiness. It gets hop bursted with Ekuanot Cryo in the kettle, and then dry hopped with our hand selected lots of Citra, Mosaic, and Strata. The result is so fresh smelling, with a big hit of Oro Blanco zest, candied orange, and a bit of pine the finish.
This one is Californian through and through!!! Very pale in color, wonderfully dry, squeaky clean and snappy on the bitterness, with a lovely resinous hop intensity that shows in both the sniff and sips. Tasting notes? Think SpongeBob Popsicles, tangerine zest, and some of that super fresh Mary Jane. Ps. This hop blend just makes us smile.
Our little pal Count Cheekula has been busy brewing up a special potion for this spooky season. Using two hops from Washington, while the third hop is from @freestylehops in New Zealand. If you haven’t experienced New Zealand Cascade yet, it’s just incredible to see how much a growing region can influence the hop itself, and in this case, bring out so much bright zesty citrus character.
Went back to the drawing board on this one, amped up the hops, increased the intensity, doubled up the whirlpool and the dry hopping! Showcasing Citra hops loud and clear here, we feel like it’s well seen and understood in all its glory here. Flavor profile? Think lychee, mango flesh, and orange blossoms.
Our pals at @yakimachief have finally given a name to one of our favorite hops of the last few years! Yep, it’s true! Experimental hop HBC 586 is now called Krush. So here it is on the heavy side, with some Mosaic and Citra thrown in for good measure. We went with an obscene amount of hops in this one! Triple Dry hopped for ultimate hop intensity. Flavor notes? Think Ting soda, guava treats, Cactus Cooler, and the Devil’s Lettuce.

The brew team were all good lil Pallys the night before they brewed this one, got good sleep, ate their Wheaties, and watched this batch of hop saturated yum yum like a hawk. We were prepared this time! And I think it shows in how dope this one came out. Tasting notes? Think Navel Orange oils, yummo blueberry cereal, pineapple whips, and a linger of the freshest Maui Wowee.

Milky yellow and wonderfully opaque, this one got power housed with Citra, and some of the best New Zealand heavy hitters all you little juice Pallys™️ could ask for. Tasting notes? I hate to bring this up, and I know it never happens, but what about the time when a movie is somehow better than the book?!!?! I know it’s impossible. But it happens, right? Like, the book Dune was prescribed to me by my doctor as a nighttime sleep medication, and it worked wonderfully! Slept like a baby. So when the movie Dune 2 came out, I was thinking it would be the same type of nighttime sleeping aid, but instead I ended up staying up super late watching it cause it was awesome!!! So yeah, give it a chance. Tasting notes? All fruit no fluff! Passionfruit syrup, mango candy, cake frosting, and sticky rice
Ya may find yourself standing on top of a car, playing it loud to the one you love. Celebrate your success of winning them over with some cans of this hazy wonder. Hits with hoppy layer of Pixi sticks, orange macarons, and pineapple upside down cake.
A wonderfully full drinking experience, especially on nitro, without being too rich/sweet, and a depth that is hard to achieve until you go “Hey Jeff! We need to brew something dark on nitro for all the spots”. To which he replies with a smile “ALRIIIIIIIIGHT!”. This one is all about highlighting some of the best malted, caramelized, and roasted barley from our pals at @simpsonsmalt in Northern England, and layering them in a way that is just down right delicious! It’s got all the vibes of a gooey chocolate chip cookie, but without all the sweetness to weigh ya down.
Masa, aka 隊長 Taicho (Captain), gave us another one of his recipe’s for his lovely smoothie beers. This one, like the others we’ve done, is a blend of 51% beer with 49% fruit puree to create a SUPER fruit beer that hits with all the yummo and rich tasting vibes that we’re looking for. We went the biggest on Pineapple, followed by Mango, and then Peach, just a squeeze of Tangerine, and enough Blue Agave to make it sing.
Our new school approach to this classic Leipzig Gose style, uses a mash of unmalted wheat and pilsner malt, as well a natural souring process, to create the perfect base to steep lots of rolled oolong tea that has been scented with magnolia flowers. It’s refreshingly sour and salty, with all the vibes of magnolia flowers and a jasmine-like character from sniff to sip.
This lil bb got a silver medal recently at the World Beer Cup and so we’re bringing it back! Get all those vacationy vibes locked in with the return of this pink wonder. It's our beloved Berliner-style Weisse with an insane amount of guava added to it during fermentation. This one's tart, dry and tropical, with huge Guava aromatics and flavor.
