We’ve got some Hard Lemonade for sale! And look at that color! That beautiful, natural color comes from the use of an insane amount of lavender pods that we use to brew a ginormous, fresh batch of lavender tea, that then gets blended with our lemonade-style seltzer. It drinks pretty balanced, with the acidity and sweetness hitting at just the right level, and then a soft tannic hit of dryness from the lavender. Enjoy straight out of the can, or pour over ice. Also legit with a dram of Old Tom Gin.
Inspired by the Paloma cocktail, Pierre has been hard at work these last few months trying to create the most perfect version of this yummo refresher using only the purest ingredients. Pink grapefruit juice, lots of grapefruit zest, and cane sugar come together with just the right amount of booze, acidity, and richness for that perfect sip of vacation vibes. You can enjoy this one at our spot, or take home cans to enjoy at yours. Served with a 'lil ice and a fresh grapefruit wheel.
We got together with the good good people at Tip Top Proper Cocktails and dreamed, and dreamed, until we came up with this super delish magic fizz! We took inspo from their canned Naked & Famous cocktail, dreaming of it of it as a tall, lower abv, super carbonated version of itself, instead of the strong sipping cocktail that it is. We started with a 100% Blue Agave fermentation, hit it with smoked citrus, and a range of Alpine and Aperitivo botanicals. The result? Beautifully burnt orange in color, with lots of fine bubbles, and insanely refreshing! The balance between the fresh lime, saffron, herbal, (very delicate waft of) smoke, and its firm acidity in the finish, make it a summer time delight!
We brewers are our happiest when we can take our time making a lager that we’re all stoked to drink. Using a mix of floor malted pilsner malt, Saaz hops from the motherland, a lager yeast that helps express the maltiness of the beer, and spund’d to create tiny bubbles of carbonation. Compared to German Pils, you’ll find this a bit richer and fuller, with a dab of mid palate sweetness that pairs well with the fine bitterness you can expect from this type of beer. Tasting notes? Think doughy bread, alpine herbs, and a lil honey.
The healthy portion of rice used to make this one does freak’n wonders to the beer! It lightens up the body, and the color, and makes for what some Pallys would call suuuuuper criiiiiiiiiiiispy! It’s a beer made for literally EVERY occasion. Eating yummo food? Drink this. Going to your favorite brewpub to hang with Cheeky? This one! Showing your friends a magic trick where the beer continues to just “disappear”? This OOOOONE!!!
Using all German ingredients, except for the water, each batch is another baby step towards recreating what we’ve experienced in Munich. Straw in color, with a subtly and nuance that is hard to describe and instead needs to be experienced! Notes of fresh baked bread, herbal tea, and puffed rice, create a beer style that is praised for it’s liter-worthy drinkability.
Max out of our Costa Mesa brewery lead the charge on this one, using Italian coastal barley and German grown Saphir hops. His love for Horror movies is shown in the name and through the art, paying homage to an over the top Italian Horror movie from the 70’s. Wonderfully aromatic with a dried lemon zest vibe along with some sage. The body is light on the palate, but the hops fill it out to create a wonderful tannin structure and a legit snappy bite in the finish.
This is a photograph! Well, a liquid photograph of that one year I visited New Zealand! And tasted through some insanely delicious NZ Pale Ales!! And walked through all those beautiful hop yards!!! Sooooooo, we wanted to try to bring that to you. A lil’ Imported Tastes From Your Local Buds™️ sort of thing. A pale ale with no caramel malt, that’s lean, and with this batch, brimming with LOTS of tropical vibes from all those yummo hops!
Our search for the perfect lager charged with all the modern hoppy goodies continues! This one gets hit with the holy trinity of hops and maintains ultimate yummo vibes from sniff to sip. Tasting notes? Think grapefruit zest and strawberry candy, with a kiss of the devil’s lettuce in the linger.
Compared to our West Coast IPA, this one's a bit lighter on the bitterness but still as hop saturated. It hits with two hops from down under that we are absolutely in love with and then paired with one varietal from Oregon too! Hoppy aromatic layers of fresh kiwi, honeydew, passionfruit, and orange marmalade.
The fire glowed beneath, steadfast and unyielding. The kettle boiled, it's breath heavy in the still air. Beneath the foam, a great aroma rose, rich and unrelenting. Then at last: hop upon hop, malt upon malt. BLACK. Deep as the abyss, immeasurably smooth. A mountain of Mosaic loomed vast, crowned with a gate of clean, unerring bitterness. A tower of Ekuanot ascended, and the plains of Chinook stretched into shadowed infinity. They saw it: The Doom Sludge All thirst departed.
Our 2023 Gold Medal winning brown ale is nothing new, as it's a style that's been around for ages, but we get really excited about the classics too! Ryan Field’s famous recipe put the focus of this beer all in the blend of toasted and caramelized malted barleys from our pals across the pond at @simpsonsmalt. Lightly hopped, just enough to create balance, and smooooooth. Flavor notes? Think caramel sauce, toasty bread, and malty tea.
Papa has been dreaming of this one for a while! It first got put onto paper, and now it’s here in liquid form! Although we don’t brew this style often, we thought it was the perfect time to do so given how wonderfully warm this summer weather has been. Papa wanted to focus on all French ingredients on this one to keep it as authentic as possible. Using pilsner malt from Champagne, a French saison yeast strain, and Petit Blanc hops, which were originally grown in the Champagne-Ardenne region near Burgundy. At first glance, you’ll notice the pure white pillowy head that everyone associates with saison. The aroma gives off bright lemony citrus along with an array of peppercorn and mild clove. The palate comes off fresh and spritzy, with a firm bitterness that carries it through the perceived sweetness of the yeast character. Finishing clean and dry, it begs for another sip… and another… and another! Magnifique! ?
A triple dry-hopped Hazy IPA that’ll have you hearing colors & seeing sounds! Audible Colors employs a full spectrum of Citra Dynaboost, Citra Cryo, Citra, CLS Cashmere, Nelson Sauvin, Rakau, and Rakau Hop Kief. Think notes of overripe apricot, zippy pear, and even a dash of lime peel. So crank up the volume and crack open another can!
STS Pils is a classic German-style pilsner but with a Russian River twist, this is because we dry hop this beer with a small amount of European hops. It is straw in color and will often have a slight haze due to the fact that there is a small amount of yeast left in the beer. This beer is hop-forward with a firm malt foundation, strong lager yeast characteristic, and a dry, bitter finish. It is often said that Pilsner is a study in purity, simplicity, and cleanliness of flavor. It should also be noted that water can make the difference between a good beer and a great beer when adjusted properly. We use a distinct water profile for STS Pils, which contributes to the crisp minerality in the finish. A truly great Pilsner is a difficult beer to perfect, as its light crisp flavor profile leaves little room for error. Modern brewing techniques (such as open-top fermentation) and old-world traditions create the distinct qualities in STS Pils.
PLINY THE ELDER - (Double IPA) Brewed with Amarillo, Centennial, CTZ, Cascade, Warrior, and Simcoe hops. Well-balanced with malt, hops, and alcohol. Slightly bitter with aromas of citrus, pine, and floral.
A Sparkiling Non-Alcoholic Lemon Seltzer w/ Lavender & a Kiss Of Sweetness Everyone's favorite seltzer kicks off 2026 with a N/A twist! We took the recipe you know and love, and changed as little as possible for this special offering. We turned the abv down to 0.4% but kept the Lavy, the Lemmy, and of course, the purple way up at 100. And look at that color!
